Spinach & feta Chicken rolls

These lovelies are stuffed with spinach, feta, garlic oil, onion and sundried tomatoes. The Chicken breast is first butterflied and pounded to a thin even level. The filling is added, rolled up and baked till perfect! Each Roll uses about 6-8 ounces of chicken and is served on a bed of sautéed spinach.
