Spinach & feta Chicken rolls

These lovelies are stuffed with spinach, feta, garlic oil, onion and sundried tomatoes. The Chicken breast is first butterflied and pounded thin. The filling is added, rolled up and baked till perfect! Each Roll uses about 6-8 ounces of chicken and is served on a bed of sautéed spinach.
