Crispy Chicken Fajita Tacos
Chicken is marinated over night with fajita spice then seared with onions and peppers on a cast iron skillet. Manchego and cheddar cheese (*optional) along side a nice heaping of chicken mixture is placed in a corn taco shell and seared till crispy in the cast-iron pan. Easy to reheat in a 350 oven on a hot sheet pan for 7 minutes. Three six inch size tortilla tacos per order (about 10 oz. of chicken per serving).
