Crispy Chicken Fajita Tacos

Chicken is marinated with fajita spice then seared with onions and peppers on a cast iron skillet. Manchego and cheddar cheese along side a heaping pile of chicken mixture is placed in a corn or soft taco shell and seared till crispy in the cast-iron pan.
Six, 6-inch size tortilla tacos per order (feeds 2-3 people).
