Carrot Ginger Soup

This puree has always been a favorite of mine. So vivid and delicious with its sweet carrot flavor with the earthiness of the ginger. The toppings I stole from “downshiftology.com” which consists of roasted pine nuts, cilantro, crispy shallots and coconut cream (all on side). These toppings really make this soup glorious!.
