Beef Taco Quesadilla

Each 10 inch flour tortilla (or 6 corn tortillas) are stuffed with a pound of 90% lean ground beef sauteed with corn, cilantro and typical mild taco spices. Then topped with jack cheddar cheese and folded over and pressed in a saute pan with a bit of olive oil for a nice crunchy shell. Accompanied by house-made pico de gallo and sour cream. These can be eaten for lunch, dinner, before practice, at the beach etc…
