


Cauliflower Rice Kibbeh & Mujadara
My homage to the classic Lebanese Kibbe Balls stays very close to tradition but swapping out the Wheat Bulgur with cauliflower rice that is slow cooked on a high temp till caramelized and golden. The filling consists of 100% lean ground beef with onions, walnuts, spices and some pomegranate reduction. The outer shell is a mix of beef, cauliflower mix, spices and a hint of mint. Baked till crunchy on the outside and perfect on the inside. Served with Mujadara (lentils, rice & onions) and optional side of labneh yogurt.
