The chicken filling is slow cooked using chicken breast meat with tomatoes, garlic and seasoning (Very Mild). Then sautéed onions and peppers are added to the mix then placed on a 6 inch tortilla and topped with jack and cheddar cheese. Another tortilla to cap it, then grilled to melting and crispy. 3 Quesadilla per order (8 ounces of chicken).
Ta accompany these discs of delight I have added a side Mexican salad which I love together with the quesadillas. The salad is comprised of a bed of romaine greens, tomato, cucumber, corn, red onions, bell pepper, red beans, black olives, cilantro and on the side will be crumbled cotija cheese (optional), and a Lime dressing. Feeds one starving adult, or two littles.
