


Chicken Salad Veronique (Thursday)
In my variation of chicken Veronique I use honey for the sweetness and toasted cashews for a delightful crunch. In addition I prefer the tartness of red grapes. The chicken will be plainly seasoned and grilled before chopping. Finishing this off will be celery, onions and parsley. I use a combination of mayo and Greek yogurt to bring it all together. Sold by the quart. (about 12 oz chicken).
