Creamy Chicken Stew

As winter moves in so does this healthy delicious and hearty stew. The base consists of real chicken stock thickened with potato, similar to what you would see in a “potato & Leek” puree, but thinner. Filled with chicken cooked right in the stew. In addition the usual suspects of celery, carrot and onion jump in along with some house smoked mushrooms. Also in the mix is garlic, thyme and extra virgin olive oil.
