Grilled Cod with Butternut Squash Mille Fueille

Fresh Cod from Captain Marden’s in Wellesley is dusted with smoked garlic and a touch of extra virgin olive oil and grilled till perfect. Served with the delicate fish is my interpretation of mille Fueille, which in sweet terms is layers of phyllo dough. My spin on this is thin layers of butternut squash slow cooked with with butter, honey and thyme. A light cream made from orange juice, butternut squash and salt is added as well as a sauce made from yogurt, prosecco, tarragon, shallots, chives and salmon eggs. Bothe the cream and sauce will be on the side. Y U M
