


Grilled Halibut Niçoise With Market Vegetables
This classic Nicoise is with a delicious twist! The Halibut (8 oz.) is simply dressed with olive oil, lemon juice, salt and pepper and then grilled. The salad will consist of fresh market vegetables such as such as scallions, garlic scapes, Romano beans, halved small eggplants, halved baby or new potatoes and squash. In addition there will be radish, tomatoes, snowpeas and eggs. Served on a bed of mixed greens. Garnished with olive tapenade. Serves 1-2 people.
