


Healthy Spring Roll Salad
This delicious salad id filled with julienned cucumber, carrot, red bell pepper, purple cabbage, scallions & fresh cilantro. The peanut sauce dressing really brings everything together and will be on the side. The dressing consists of coconut aminos, tamari, rice vinegar, sriracha, peanut butter, ginger, garlic and sesame oil. For those with nut allergies, do not fear! I added a sun butter version made with sunflower seeds.
