Herb Encrusted Pork Loin (Thursday)

Pork loin is trimmed then scored on top, which holds the herbs wonderfully. IN addition to herbs, a glaze of Dijon mustard and Worchester sauce is brushed on top for flavor and also to keep the herbs in check. The loin is cooled and then sliced. In addition to the pork a wonderful is a wonderful gravy made with butter, shallots, chicken stock and white wine (optional). The gravy is not dairy free but the pork is.
