Chicken breasts are tenderized lightly with a mallet then dredged in a lightly seasoned gluten free flour/cornstarch mixture then sauteed in a bit of olive oil and earth balance (butter substitute). Once finished and golden brown a generous amount of fresh lemon juice is squeezed over everything. Once the chicken is removed some shallots and garlic are added to the oil/butter and cooked a bit . Then stock is added to complete this amazing sauce. Served with marinated artichokes, green beans and mashed potatoes.
