Mediterranean Grain Bowl with Lentils
This delightful and filling salad is perfect for Lunch or dinner. Roasted zucchini, tomatoes, avocado and shallots with Farro, lentils, chickpeas, Kalamata olives and really good extra virgin olive oil. All tossed with a flavorful dressing of lemon, garlic, za’atar, sumac, and a dash of Dijon. Want more protein? You can always add grilled chicken and/ or feta!
