


Mediterranean Salmon
This light and delicious meal I think would be most enjoyed with a glass of Kim Crawford Sauvignon Blanc out on the deck overlooking the last remnants of summer. The salmon is marinated overnight with fresh oregano, garlic, lemon and a pinch of salt and pepper. Served over a bed of Israelis cous cous (optional) garnished with arugula greens and topped with a Mediterranean salsa of sorts consisting of tomato, cucumber, green olives, herbs and feta (feta optional).
