Local Halibut, from Capt. Marden’s in Wellesley ($40 lb.), is seared till mahogany brown. Then baked at 350 till its about 115 F. in the center. The Halibut is finished with a Citrus Sauce Beurre Fondue (on-side). Accompanied by roasted asparagus with lemon and onions lightly caramelized in chive oil . This gorgeous fish will come in 3 sizes.
