salmon (5 or 8 oz.) is marinated in olive oil with garlic, thyme, lemon zest and a little grain mustard overnight then slow roasted with a bit of apple wood on the pan to give a hint of the delicious apple smoke flavor. Broccolini is also roasted with the salmon for the same added aroma. The lentils are braised slowly with a mirepoix of vegetables (celery, carrot & onion) along with a olive oil and fresh herbs then deglazed with sherry.
