Skinny Chicken Piccata
I have modified this classic slightly with a focus on health without detriment to these wonderful flavors. I use a bit of seasoned arrow root to replace the flour & earth balance replaces butter and maintains the same qualities of flavor as butter. Lastly I use extra virgin olive oil. All these substitutions are gluten and dairy free and provide more nutrients. To make up for any lost flavor the wine is doubled! Kidding (sort of). I add some chicken stock slightly thickened with more arrow root to create a beautiful and creamy caper studded sauce. Served with grilled asparagus and whipped cauliflower. Garnished with fresh parsley and lemon slices.
