Coq au vin is a hearty French stew of chicken braised in red wine with mushrooms and crisp pancetta. This variation is gluten-free and dairy-free. I still use beef stock, cognac, red wine, pancetta and instead of boned in chicken parts I use medallions made from chicken breast. No one in my family noticed. There will be an option to add mashed potatoes (also dairy free).
