


Thai Green Bok Choy, Bean Sprouts & Oyster Mushroom Curry with Rice Noodles
This healthy low fodmap meal is short on calories and long on flavor. Oyster mushrooms and whatever fresh mushrooms I find, are sautéed with sesame oil, Bok choy, ginger, bean sprouts, coriander, rice noodles, tamari and peanuts (optional). Finished with green curry and fresh lime juice. Guilt-free!
