Winter Freekeh Salad with Orange
I’ve added freekeh to create a filling base, alongside chickpeas, fresh greens (baby arugula, baby kale and dandelion leaves), and pumpkin seeds or pepitas (I love them). A simple orange juice and olive oil vinaigrette keeps the original flavor notes of the salad in place and dresses the freekeh nicely.
