Atlantic Cod is tossed with a touch of evoo, za’atar (a blend of sumac, dried herbs, and sesame seed), smoked garlic and salt then roasted till perfect. The potatoes are quartered then blanched, tossed with an oil blend of canola and evoo and roasted till golden. The potatoes are lightly seasoned with salt, pepper and a pinch of za’atar. Acting as a condiment to accompany this will be a mixture of Castelvetrano olives, mint and red onion with red wine vinegar.
